- Whole milk: 140ml (room temperature)
- Unsalted butter: 20g (softened for dough) + extra 20-30g for brushing if desired
- Egg: 1 large (for dough)
- Active dry yeast: 3g
- Fine sugar: 60g
- Salt: 1g
- White sesame seeds: a small handful (for topping)
- Egg yolk: 1 (for brushing the surface before baking)

Step-by-Step Croissant Making Guide

Step 1: Prepare the Dough
- In a large mixing bowl, combine 300g high-gluten flour, 60g sugar, 1g salt, and 3g yeast. Mix evenly.
- Add 140ml room-temperature milk and 1 beaten egg. Stir until ingredients begin to form a rough dough.
Step 2: Incorporate Butter
- Add 20g softened butter into the dough.
- Knead the dough by hand or with a stand mixer for about 10 minutes. The dough should become smooth and elastic, with a slightly sticky texture.
Step 3: Develop the Gluten ("Glove" Stage)
- Continue kneading the dough until it passes the "windowpane test"—stretch a small piece; it should stretch thin without tearing. This ensures the layers will be soft and airy.
Step 4: First Rise (Fermentation)
- Shape the dough into a ball and place it in a lightly greased bowl. Cover with plastic wrap or a damp towel.
- Let it rise in a warm place for 1–2 hours, or until the dough doubles in size.
- Test readiness by gently poking the dough with a finger—if the indentation remains, it's ready.
Step 5: Shape the Croissants
- Punch down the dough gently to release air.
- Roll the dough into a rectangle about 25cm x 15cm.
